Ceylon Cinnamon is a tree from whose bark we get this spice, which has been prized since the dawn of time. It is also sometimes called the "true" cinnamon tree, as opposed to the Chinese Cinnamon tree, Cinnamomum cassia, which is known as the "false" cinnamon tree. However, the latter produces an essential oil in its leaves whose composition is relatively comparable to that of Ceylon cinnamon bark.
