Dill

Dill

An aromatic plant commonly used in cooking as a condiment, Dill is an annual herb that can grow to more than a metre in height. Its slender stems end in delicate flat umbels, composed of small yellow flowers. The essential oil extracted from its seeds offers characteristic, fresh and aniseed flavours.

Umbelliferae - or Apiaceae - are found in abundance all over the world, including Europe. Several of them provide us with an essential oil: anise, caraway, coriander, fennel... Dill essential oil is composed of monoterpenes and ketones.

It acts, among other things, on flatulence, colic and intestinal spasms, because the essential oils contained in the seeds have an antispasmodic effect on the smooth muscles that control the peristaltic movements of the intestine. It combats liver and gallbladder insufficiency. It is also a good diuretic and kidney protector.

It has a fine, fresh, slightly aniseed-like aroma. Dill essential oil has a neurotonic and antidepressant effect. It harmonises all the digestive functions, revives the mind and sharpens it through its eminently cephalic action.
